ISO-Standard IQF frozen durian production process at MitaFood

To preserve the rich, creamy flavor and natural golden color of tree-ripened durian, the frozen durian production process requires strict control from initial preparation to rapid freezing. Proper compliance with technical standards not only helps extend shelf life but also ensures the product meets export requirements. Let’s explore the detailed production process at MitaFood below!

5 Steps in MitaFood’s frozen durian production process

At MitaFood, our frozen durian production process is standardized across five closed-loop stages to preserve the quality of naturally tree-ripened fruit. We strictly monitor technical specifications at every stage, from raw material reception to finished product storage.

Step 1: Selecting and sorting raw materials

MitaFood only sources naturally tree-ripened Ri6 and Monthong durians from linked growing areas that meet VietGAP standards, with a minimum sugar content of 24 Brix.

The rejection rate for raw materials that fail to meet our standards, including damaged, artificially ripened, or pest- and disease-affected fruit, is strictly controlled at below 1.5%.

Each batch of raw materials is weighed, recorded with its Planting Area Code (PUC), and sorted according to the standard weight range of 2.0 kg to 5.5 kg before entering the official pre-processing line.

Step 2: Surface cleaning and disinfection

After sorting, the durians are transferred to an automated ozone bubble-washing system and continuously soaked and washed for 5 minutes to effectively remove microorganisms from the fruit surface.

MitaFood uses clean water that meets the standards of the Vietnamese Ministry of Health, maintaining a washing spray pressure of 3.5 bar to thoroughly clean between the spikes without damaging the fruit peel.

After washing, the durians are transferred through a drying conveyor using 30°C convective airflow for 10 minutes to ensure that the peel surface is completely dry.

Step 3: Peeling and portioning in a sterile environment

The entire peeling and seed-removal process is carried out in an ISO Class 8 cleanroom, with the air-conditioning temperature consistently maintained at 18°C.

Workers are equipped with full-body medical protective gear and disinfect their hands every 15 minutes to maintain a total aerobic plate count below 10³ CFU/g.

After the durian flesh is separated, it is carefully sorted and packed in PA/PE trays in precise portions of 500 g or 1 kg, or packed in 10 kg bulk cartons for the durian puree line.

Step 4: Vacuum packaging and rapid IQF freezing

The durian trays are vacuum-sealed at a vacuum level of -0.09 MPa before being transferred into the IQF rapid-freezing chamber.

The system maintains an ultra-low temperature range of -35°C to -40°C, with a freezing time of 45 to 60 minutes depending on the product specifications. This process allows ice crystals to form at an extremely small size of less than 10 microns.

Thanks to the rapid freezing process, the cellular structure of the durian flesh remains intact. As a result, the product does not experience excessive water loss or lose its original smooth and creamy texture after thawing.

Step 5: Carton packaging and standard cold storage

After leaving the IQF chamber, the finished products pass through an automatic metal detector with a sensitivity of 1.0 mm for Fe and 1.5 mm for Non-Fe metals to ensure the complete removal of foreign metal contaminants.

The products are packed in durable five-layer corrugated cartons, labeled with QR codes for traceability, and immediately transferred to a cold storage facility maintained at -18°C with a relative humidity of 85%.

MitaFood’s 2,000-ton-capacity cold storage facility is equipped with an automated 24/7 temperature monitoring system, ensuring stable product quality throughout storage and for export orders.

Frequently asked questions about frozen durian production technology

To help B2B partners better understand our processing technology, MitaFood has compiled detailed answers to some of the most frequently asked questions below:

Why does frozen durian release water after thawing?

Water release after thawing can occur when slow freezing damages the cellular structure of the fruit. MitaFood uses IQF technology at temperatures as low as -40°C to rapidly freeze the product and help preserve its original smooth and creamy texture.

What is the recommended storage temperature for long-term frozen durian storage?

The product should be continuously stored in cold storage at -18°C or below to help maintain its quality for a shelf life of 18 to 24 months.

Does Mitafood’s production process affect the natural flavor of durian?

No. Thanks to rapid IQF freezing technology in a controlled hygienic environment, MitaFood frozen durian retains up to 95% of its natural aroma, vibrant golden color, and rich, creamy texture, similar to freshly harvested fruit.

Does Mitafood's production process compromise the natural flavor?

Does Mitafood’s production process compromise the natural flavor?

Does Mitafood offer customized processing according to customers’ specific standards?

Yes. We provide OEM/ODM services, allowing partners to customize technical specifications, peeling and processing requirements, portion sizes, packaging formats, and private-label packaging according to their exact requirements.

How should frozen durian be thawed properly without compromising quality?

The product should be transferred from the freezer to the refrigerator and naturally thawed at a temperature of 2°C to 5°C for 3–5 hours. This method helps the durian flesh recover its smooth and creamy texture while minimizing quality loss.
